Easy dishes with potatoes

Potatoes have always been delicious, be it any dish. You either love them or hate them, but there’s no much of ignoring potatoes at all. The ever so versatile and humble vegetable ingredient is used widely in almost all types of cuisines to make a variety of yummy dishes ranging from fries and wedges to cutlets, curries, and bakes, and yummy tummy filling pies. So here we have listed some of the Easy dishes with potatoes.

It’s interesting to know that potatoes are eco-friendly crops and are very easy to grow as they require minimum fertilizers and chemicals to support them throughout their growth. While buying potatoes, it is recommended that you choose the ones that have a comparatively smooth skin and firm texture. It also may be noted that it is advised that you avoid ones that are sprouted or have some kind of a greenish tint. This is an indication which implies that the potatoes have been exposed to a lot of sunlight during their storage which can sometimes produce a bitter taste.

Fried, mashed, baked, or boiled, a potato just tastes delicious in any of its forms. However, it is often called out for being a starchy companion.

So, here are two underrated Easy dishes with potatoes for potato lovers!

Dum Aloo Lakhanvi

This is a dish that has fried potatoes that are stuffed with paneer, added onto a spicy onion and tomato gravy.

Ingredients:

1/2 Kg Potatoes

100 gram Potatoes, mashed

100 gram Crumbled paneer or cottage cheese

one tsp Red chilli powder and salt

add 1 tsp Garam masala

also 1 1/2 tsp Kasoori methi

3 tbsp Ghee

1 tbsp Butter

1 tbsp Cream

For the onion gravy:

200 gram Onions

1/2 tsp Garam masala

to taste Salt

1 tsp Ghee

For the tomato gravy:

200 gram Fresh tomato puree

to taste Salt

1 tsp Ghee

Steps:

For onion gravy:

Heat the pan. Add a tablespoon of ghee. Then add all the ingredients and saute them. Make sure that the onions are nice and glossy. Keep the gravy aside.

For tomato gravy:

Heat a tablespoon of ghee. Also add all the ingredients and cook them for a couple of minutes. Keep this gravy aside.

For the potatoes:

  • Peel out the potatoes. Cut out their cores and deep fry them.
  • Keep the potatoes aside to cool down and meanwhile prepare for the filling. Mix the mashed potatoes and paneer well until they blend in. This is the main filling.
  • Now take the fried potatoes and stuff them with the filling and leave aside.

The final preparation:

  • Take the previously prepared onion and tomato gravies and cook them in oil until the oil finally separates out.
  • Add garam masala, chili powder, and kasoori methi as per quantity. Mix them all well and cook for 1 minute.
  • Add the butter and cream and mix well.
  • Lastly, add the stuffed potatoes and simmer for about 3-5 minutes.

And voila! The dish is ready!

Honey Chilli Potato

Ingredients:

For potatoes:

2 potatoes (sliced), peeled

3-4 tbsp cornflour or maida

to taste salt

1 tsp red chilli powder

oil (for deep frying)

For the base:

1 tsp oil

spring onions (with stalk), fried

1 tbsp garlic paste

1 capsicum, sliced

2 tbsp honey

to taste salt

1/4 tsp soya sauce

3 tsp white sesame seeds

2 tsp chilli sauce

METHOD:

For the potatoes:

  • In a large bowl, add some cornflour, salt as per taste, and a tablespoon of red chili powder.
  • Slice the potatoes and add them into the large bowl and mix well until the potatoes are coated with cornflour.
  • Now, Heat oil in a pan and deep fry the coated potatoes until they turn golden brown.

For the base:

  • First, in a pan, add 2 tablespoons of oil, some garlic paste, and finely chopped spring onions and saute them on high flame for about a minute.
  • Add finely chopped capsicum, 2 tablespoons of honey, salt as per taste, 2 tablespoons of soya sauce, and 2 tablespoons of chili sauce. Saute for about 2-3 minutes on medium flame.
  • Add the previously deep-fried and well-coated potatoes and mix well and serve hot.
